My Sinners inspired Rum Sour cocktail designed to show off Stack's layers

Ingredients

  • 2 oz Rum
  • 1 oz Lime juice
  • 1 oz Peach puree
  • 1/4 oz Cinnamon simple syrup
  • 1 pinch Powered ginger (ginger can be overwhelming, so use according to your taste perference.)
  • 1 egg white
  • 1/2 oz Red wine

Instructions 

  • Combine first 5 ingredients to a cocktail shaker without ice. Stir to combine.
  • Add in egg white and give it a vigorous shake for 10-15 secs. (this is known the dry shake)
  • Add in ice and give it another vigorous shake for 10-15 secs. (this is known as the wet shake)
  • Pour cocktail into serving glass. With or without the ice is up to you.
  • Using the back of a barspoon, float red wine on top.

Notes

In order to get the best foam when using an egg white, I've found using the dry/wet shake method works the best for me. And to make allowances for my RA, I use an electric frother for maximum agitation purposes. Plus, it ensures I don't lose control of the cocktail shaker and send it flying across the room.... Don't ask me how I know this. :-)
