St. Patrick’s Day here, and what better way to celebrate than with a splash of green in your glass. These five cocktails are playful, colorful, and perfect not only for March festivities but also for any occasion when you want a green cocktail that feels fresh, fun, and a little unexpected.

Mermaid Mimosa

I found this delightful cocktail on Delish. It’s simple, light, and give you a magical blue to green color shift when layered properly. (I’ve been obsesses with color change cocktails ever since my Tickled Pink cocktails feature last month.)
You have to follow the steps exactly to achieve the blue to green color change effect.
Ingredients
- 1 oz Midori
- 1 oz Blue Curacao
- Prosecco
- Pineapple juice

Directions
- Add Midori to your glass
- Add pineapple juice (about 3 oz)
- Top off with Prosecco (I used about 3 oz)
- Slowly pour Blue Curaçao on top. It will sink and shift the mimosa green
- Stir if you want a uniform color, or leave it layered for more magical ambience.
- Enjoy!
Pot of Gold Mimosa


Here’s another fun mimosa with a color layering effect courtesy of Champagne & Coconuts. The trick here is layering so you get that shimmering yellow to green effect.
Ingredients
- 2 oz orange juice
- 1/2 oz vodka
- 1/2 oz blue curaçao
- Prosecco
Directions
- Add orange juice & vodka to your glass
- Add in 4-5 oz of Prosecco
- Top with Blue Curaçao and watch the colors shirt
Emerald Lady
This tropical inspired blend from Flour on my Face reminds me of a beachside pina coloda at sunset.
Ingredients
- 1 oz rum
- 1.5 oz Midori
- 2 oz pineapple juice
- 3/4 oz orange juice
- 1 oz cream of coconut
- 1 oz blood orange Pellegrino ( I swapped this in for the original club soda for more flavor)
- Crushed ice
Directions
- Blend all ingredients until smooth
- Pour into your favorite glass, add a tiny umbrella, and take a quick mental trip to the tropics.
Note: The original recipe calls for green food coloring, but I opted for extra Midori plus a splash of Blue Curaçao instead.
Emerald Sunrise
For all my tequila lovers out there, I found this one courtesy of The Good Hearted Woman. It’s a refreshing alternative to a margarita.
Ingredients
- 1.5 oz tequila
- 1.5 oz Blue Curaçao
- 4-6 oz of orange juice
Directions
- Add tequila, and blue curaçao to a glass with ice, stir.
- Top with orange juice, stir again, and enjoy.
Midsummer Gimlet
I couldn’t resist sharing a green twist using one of my signature drinks. With gimlets being a fav, I did a spin on my custom gimlet recipe (you can find it here). To keep it light and springy, I used Hendrick’s Midsummer Solstice gin.
Ingredients
- 2 oz Hendrick’s Midsummer Solstice
- 1 oz St. Germain
- 1/2 oz lime juice
- 1/2 oz cucumber juice
- a splash of Midori
Directions
- Shake all ingredients with ice.
- Strain into a martini glass, (or whatever you have on hand).
- Sip, relax, and enjoy
